Ingredients:
- 1/2 cup coconut flour
- 4 large eggs
- 1/2 cup milk (dairy or non-dairy)
- 2 tablespoons extra virgin coconut oil
- 1 tablespoon coconut sugar
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions:
- Preheat your waffle iron according to the manufacturer’s instructions.
- In a mixing bowl, whisk together the coconut flour, baking powder, and salt until well combined.
- In a separate bowl, whisk together the eggs, milk, extra virgin coconut oil, coconut sugar, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients while whisking continuously. Mix until a smooth batter is formed. Let the batter sit for a few minutes to allow the coconut flour to absorb the liquid. If the batter is too thick, you can add a bit more milk to achieve the desired consistency.
- Lightly grease the waffle iron with cooking spray or brush it with extra virgin coconut oil.
- Spoon the batter onto the preheated waffle iron, spreading it out evenly. The amount of batter needed will depend on the size of your waffle iron.
- Close the waffle iron and cook according to the manufacturer’s instructions, usually until the waffles are golden brown and crispy.
- Once cooked, carefully remove the waffles from the iron and repeat the process with the remaining batter.
- Serve the coconut flour waffles warm with your favorite toppings, such as fresh fruit, yogurt, coconut nectar, or whipped cream.
