Ingredients:
- 1/2 cup coconut flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup extra virgin coconut oil
- 1/2 cup coconut sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Optional: 1/2 cup chocolate chips, chopped nuts, or shredded coconut
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a mixing bowl, whisk together the coconut flour, cocoa powder, and salt until well combined.
- In a separate bowl, combine extra virgin coconut oil and coconut sugar. Stir until the coconut sugar is dissolved and the mixture is smooth.
- Add the eggs, one at a time, to the virgin coconut oil mixture, stirring well after each addition. Then, stir in the vanilla extract.
- Gradually add the wet ingredients to the dry ingredients and mix until a thick and smooth batter is formed.
- If desired, fold in any optional ingredients such as chocolate chips, chopped nuts, or shredded coconut.
- Pour the batter into the prepared baking dish and spread it out evenly.
- Bake the brownies in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Be careful not to overbake.
- Remove the baking dish from the oven and let the brownies cool in the dish for about 10 minutes. Then, transfer them to a wire rack to cool completely.
- Once cooled, cut into squares and enjoy your homemade Coconut Flour Brownies. They can be stored in an airtight container at room temperature for a few days.
