Keto Cookies with Coconut Flour

Ingredients:

  • 1/2 cup coconut flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup coconut sugar

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and coconut sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
  4. In a separate bowl, whisk together the coconut flour, salt, and baking soda.
  5. Gradually add the dry ingredients to the wet ingredients and mix until well combined. The dough should come together and be slightly sticky.
  6. If desired, fold in any optional ingredients such as chocolate chips, chopped nuts, or shredded coconut.
  7. Drop rounded tablespoonfuls of dough onto the prepared baking sheet, spacing them a couple of inches apart. You can flatten the dough slightly with the back of a spoon or your fingers.
  8. Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are golden brown.
  9. Remove the baking sheet from the oven and let the cookies cool on the sheet for a few minutes. Then, transfer them to a wire rack to cool completely.
