Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter and coconut sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
- In a separate bowl, whisk together the coconut flour, salt, and baking soda.
- Gradually add the dry ingredients to the wet ingredients and mix until well combined. The dough should come together and be slightly sticky.
- If desired, fold in any optional ingredients such as chocolate chips, chopped nuts, or shredded coconut.
- Drop rounded tablespoonfuls of dough onto the prepared baking sheet, spacing them a couple of inches apart. You can flatten the dough slightly with the back of a spoon or your fingers.
- Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are golden brown.
- Remove the baking sheet from the oven and let the cookies cool on the sheet for a few minutes. Then, transfer them to a wire rack to cool completely.
