Ingredients:
- 1 cup coconut flour
- 1 cup all-purpose flour (Can use rice flour, cassava flour, wheat flour)
- 1 cup grated coconut
- 1 small onion, finely chopped
- 2 green chilies, finely chopped
- 2 tablespoons fresh cilantro, chopped
- 1 teaspoon salt
- Water, as needed
- Virgin Coconut Oil, for cooking
Instructions:
- In a large mixing bowl, combine the coconut flour, all-purpose flour, grated coconut, chopped onion, green chilies, cilantro, and salt. Mix well until all the ingredients are evenly incorporated.
- Gradually add water, a little at a time, and knead the mixture to form a soft and pliable dough. The amount of water needed may vary depending on the consistency of the dough. Start with about 1/2 cup of water and adjust as necessary.
- Divide the dough into small golf ball-sized portions. Take one portion of the dough and flatten it slightly with your hands.
- Heat a griddle or non-stick pan over medium heat. Place the flattened dough on the hot griddle and cook for about 1-2 minutes on each side or until golden brown spots appear.
- Brush some ghee or oil on the surface of the roti and flip it over. Cook the other side for another 1-2 minutes until it is cooked through and slightly crispy.
- Repeat the process with the remaining dough portions, adding more ghee or oil as needed to cook the rotis.
- Serve the coconut roti warm with your choice of accompaniments, such as chutney, curry, or yogurt
