Low GI – Gluten Free – Vegan Coconut Flour
Coconut flour is made from ground and dried coconut meat. Coconut meat is the white, firm part of the coconut which is found after crack opening the coconut shell. The white flesh is scraped and needs to be separated in order to produce the dry ”flour”. Once the meat is strained and separated from the coconut’s milk, it is baked at a low temperature to dry it out and create powdery flour made entirely of coconut.
White wheat flour has high Glycemic Index values and results in a spike of blood sugar levels. Coconut flour is Low GI and hence does not raise blood sugar levels like wheat flour.
